It’s fall and all the autumn inspired treats are calling my name, starting with these Paleo Apple Cinnamon Cookies! They’re sure to be a new favorite!
1/2 cup dried apples, chopped
1 cup almond butter
1/2 cup coconut sugar
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp vanilla
Preheat oven to 350° Fahrenheit, and line one large or two medium-sized baking sheets with parchment paper. Prep apple as noted.
In a large mixing bowl, whisk egg. Add almond butter, coconut sugar, cinnamon, baking soda and vanilla. Use a large spoon to mix until batter forms.
Stir in chopped apple. Scoop golfball sized dollops onto parchment lined baking sheet(s).
Place in the oven and bake for about 10-12 minutes or until the edges start to brown. Let cookies cool on the pan for at least 5 minutes before removing from baking sheets. Store in an airtight container at room temperature for up to a week.
