Chocolate and Goji Berry Crackles

Makeover your favourite kids’ recipe with this healthy, paleo-friendly version of the chocolate crackle.


2/3 cup coconut oil, melted

1/3 cup Dutch processed cocoa powder

1/3 cup rice malt syrup

1/2 cup desiccated coconut

4 cups whole grain puffed rice

1/4 cup dried goji berries, plus extra for garnish


Step 1
Place melted coconut oil in a large mixing bowl, sift over cocoa powder into the oil and whisk well to combine.
Step 2
Add rice malt syrup to the oil and cocoa mixture and whisk well to combine.
Step 3
Stir in coconut to combine. Stir in puffed rice and goji berries and mix well to coat the rice well.
Step 4
Spoon mixture into individual cupcake patties, garnish with extra goji berries. Chill in the fridge for one hour before serving.
