200g butternut snap biscuits crushed
100g butter melted
2 Golden Gaytime ice creams
500g cream cheese softened
3/4 cup brown sugar
1 tsp vanilla extract
300ml thickened cream
1/3 cup thickened cream
100g dark chocolate chopped
Lightly grease a 22cm round springform cake pan. Combine crushed biscuits and melted butter in a bowl. Stir to combine. Press over base of pan. Refrigerate for 30 minutes or until firm.
Using electric beaters, beat cream cheese and sugar until smooth. Beat in vanilla and cream until light and fluffy. Spread mixture into pan and smooth the surface. Freeze overnight or until just firm.
To make the chocolate sauce, combine cream and chocolate in a small saucepan over low heat. Stir for 2-3 minutes or until mixture is smooth. Cool for 30 minutes or until thickened slightly.
Remove frozen cheesecake from pan and place on a serving plate. Drizzle cheesecake with chocolate sauce. Remove sticks from Golden Gaytimes and cut into chunks. Pile Gaytime chunks in the centre of the cheesecake. Serve immediately.
