
The German people made this recipe that is very simple but is really delicious. Adding red currants to this special pie will make it an exquisite treat!

Ingredients.
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ cup butter, softened
- ½ cup white sugar
- 2 egg yolks
- 1 ½ teaspoons grated lemon zest
- 2 egg whites
- ½ cup white sugar
- 2 teaspoons cornstarch
- 2 1/4 cups red currants
Preparation.
Step 1.
To Make Dough: In a medium bowl, sift together flour and baking powder. Mix in butter, sugar, egg yolks and lemon zest until mixture forms dough. Let it rest in a cool place for 30 minutes.
Step 2.
Preheat the oven to 325 degrees F (165 degrees C). Roll out dough and put into a springform pan.
Step 3.
Bake in the oven for 25 minutes, or until golden yellow.
Step 4.
To Make Filling: In a medium bowl, beat egg whites until stiff. Gradually stir in sugar and cornstarch; beat for 5 minutes. Fold currants into mixture and pour into pie crust.
Step 5.
Bake in the oven for 10 minutes, or until the top is lightly browned.
