Strawberry and Passionfruit Pikelets

Colourful, tasty and low fat, these pikelets are the perfect choice for afternoon tea, dessert or brunch.


2 tbsp fresh ricotta

1 tbsp strawberry jam

4 bought pikelets

4 strawberries, washed, hulled, thinly sliced

1 passionfruit, halved, pulp removed


Step 1
Place ricotta and jam in a small bowl. Stir until well combined. Spread the ricotta mixture evenly over pikelets . Top with strawberries and passionfruit to serve.
