
Who said healthy desserts can’t be delicious? Well this sweet and nutty treat is not only good-for-you, but can be whipped up in 15 minutes using a Thermomix!
Ingredients
250 g banana, cut into pieces and frozen
100 g smooth peanut butter
100 g coconut milk
Coconut nectar, to serve
Cacao nibs, to serve
Coconut flakes, toasted, to serve

Directions
Step 1
Place frozen banana into mixing bowl and blend 10 sec/speed 6.
Step 2
Add peanut butter and coconut milk and blend 40 sec/speed 6, until almost smooth.
Step 3
Scrape down sides of mixing bowl with spatula, then blend 20 sec/speed 6, until smooth.
Step 4
If ice cream is too soft, transfer into a freezable container and place into freezer until firm. Drizzle with coconut nectar (optional) and sprinkle with cacao nibs (optional) and toasted coconut flakes to serve.
